The Alcohol Gun (or Acidimeter Salut) is a handheld dairy testing instrument used for the rapid, selective determination of raw milk freshness and alcohol stability upon reception.
Preparation & Calibration
  • Reagent check: Fill the Acidimeter Salut reservoir with typically 72% to 76% ethanol concentration mixed with alizarin indicator.
  • Cleanliness: Ensure the integrated or accompanying stainless steel test tubes and drain holes are clean, dry, and free of residual soap or previous milk samples.
  • Sample collection: Stir the raw milk container thoroughly to obtain a representative sample of the fresh milk right after delivery.
Physical Execution
  1. Load reagents: Remove the front cap or plug from the Acidimeter Salut reservoir and fill it with the solution, then secure the cap back in place.
  2. Measure milk: Draw or measure an exact equal volume of the milk sample (typically 2 mL) into the testing vial or tube.
  3. Combine: Dispense an equal volume (2 mL) of the solution from the pistol directly into the 2 mL milk sample.
  4. Mix and observe: Mix the combined fluids gently by swirling or inverting the tube, and inspect the mixture immediately for changes in color and texture.
Visual Interpretation
  1. Normal fresh milk: Displays a uniform brick-red coloration with no visible clots or coagulation.
  2. Low/Slightly acid milk: Displays a rosy or yellowish hue, often accompanied by fine flakes or clots.
  3. High acidity / Spoiled milk: Turns distinctly yellow with clear curdling or coagulation.
  4. Alkalinized or mastitic milk: Shifts to a violet or purple coloration.
